Favorite Thanksgiving Dish
Probably my favorite part of the Thanksgiving meal is my Aunt Martha's Cranberry Relish Mold. It's not just the old cranberry jelly out of the can - it's so much better! It takes a good while to make, but it's definitely worth it. Here's the recipe:
1 (20 oz) can crushed pineapple
2 pkgs (small) cherry jello
1.5 cups ground raw cranberries (1 lb) - wash, blend in sugar
1 small orange, ground
1/2 cup chopped walnuts or pecans (optional) - we usually make 1/2 with nuts, 1/2 without
2 tablespoons lemon juice
3/4 cups sugar
2 cups hot water
1/2 cup cold water
Drain pineapple, reserve syrup. Combine jello and sugar, dissolve in hot water. Add cold water, lemon juice, and pineapple juice. Chill til partially set. Add pineapple and remaining ingredients. Turn into 2 quart mold. Chill until firm. Makes 12 servings or 1 large plastic mold with top. Oh so yummy!
